I wouldn't look too deep into it because, even if it did happen, I doubt it's very relevant to the plot. Like, say, Kurt Zisa or the Phantom from KH1. As optional bosses, they may have happened, but they were isolated incidents.
It also gets a bit sticky because he's identified in the information bar as Vanitas' "Lingering Spirit," implying that he's the same type of being as Terra's Lingering Spirit. Yet, judging by the mark on his mask, Vanitas' Remnant is an Unversed of sort, yet we could not possibly say that Terra's LS is an Unversed.

Or maybe LS' are just the equivalent of Org. XIII members.
If unversed are fledgling emotion (like, rage, anger, REVENGE) so perhaps if someone dies feeling one of these emotinons strong enough while their heart is removed a Lingering Spirit is made.

It's been said that the Mysterious Figure's battle is within canon, so who's to say Vanitas's Remnant isn't?

Ah. So when exactly does this battle take place? right between the final boss for Terra, Ventus and Aqua? and if Vanitas LS were canon when do you think his battle took place? I mean if it were after the final boss for the 3 main characters none of them would be in a position to meet him, much less fight him (Terra and Aqua in the RoD and Ventus comatose)
